Moroccan Spiced Whole Roast Chicken Slow Cooker

Moroccan spiced slow cooker roast chicken with orange kumara and chickpeas... yum, just the type of meal we all love to come home to when it's chilly outside.

A great weekend meal too, put it on at lunchtime, cook on high and skip out for a few hours in the afternoon and come home to exotic spiced aromatic chicken roasting in your slow cooker!

Moroccan Spiced Whole Roast Chicken Slow Cooker Recipe

Serves 4
Cook on low for 8 hours or high for 4 hours

1.5-2kg whole chicken
650g orange kumara, peeled and cut into 3cm rings
400g can of chickpeas, drained, rinsed
1 Cup chicken stock
2 Tblsp dried garlic granules (or 4 cloves finely chopped)
1/2 tsp ground cinnamon
1/2 tsp chilli powder
2 tsp ground cumin
2 tsp smoked paprika
chopped fresh coriander to garnish
2 Tblsp toasted slivered almonds

  • Make a layer with the kumara in the slow cooker base, add the chickpeas, and place the rinsed and dried chicken to rest on top of the kumara. 
  • Carefully add the chicken stock, the garlic and cinnamon. 
  • In a small dish, mix the chilli, cumin and paprika together and then sprinkle evenly over the whole chicken.
  • Add your thermometer into the thickest part of the roast, cover and cook until the thermometer reaches 87 degrees Celsius, or until the juices run clear.  On low that will be about 8 hours, on high, about 4 hours.
  • To serve, cook some fluffy white rice to soak up the juices, add some veges on the side to make sure you're getting some extra vitamins and serve the carved roast, kumara and chickpeas topped with a sprinkle of the chopped coriander and toasted slivered almonds and it won't long before you have a round of happy, full tummies and a stack of cleaned plates.

Whole Chicken Roast | Slow Cooker Roast Chicken

The ultimate in easy summer recipes is to over night cook a large whole roast chicken in your slow cooker, and in the morning, take it out and pop it in the fridge so when you come home for dinner you have cold cooked chook to make a meal with.

Obvious choices for my family are chopped chicken over lettuce leaves with various other salad extras, such as chopped tomatoes, grated carrot, diced peppers, mushroom slices, a sprinkle of cranberries, pumpkin seeds, fine chopped herbs and swirl of your favourite salad dressing. Add a bowl of rolls and set the table, dinner is served!


LEMON HERB ROASTED CHICKEN
Serves 4-6
2-3kg whole roast chicken
½ teaspoon salt
½ onion, chopped
2 tablespoons fresh parsley
1-2 tablespoons butter
½ teaspoon dried thyme
Juice of one lemon teaspoon
paprika

Place the onion in the cavity of the chicken and rub the skin with butter. Place chicken in the slow cooker.
Squeeze lemon juice over chicken and sprinkle with remaining seasonings.
Cover and cook on low for 8-10 hours or on high for 4 hours.

Orange Chicken | Easy Chicken Crock Pot Recipe | Slow Cooker Recipes NZ

This is the best "prepare the night before" and leave in the fridge slow cooker recipe! It is so easy! I use a large zip lock bag and add all the ingredients to it and smoosh it around so all the surfaces are covered, pop the bag on a plate and put it in the fridge.

Then in the morning all I have to do is remember to get it out of the fridge and pour the contents of the bag into the slow cooker, and turn it on before I head out the door!

It definitely tastes better when it has marinated overnight before it has cooked too - nice bonus!

Orange Chicken

1kg chicken wings, mini or regular drumstick or thigh cutlets
3-4 Tbsp orange marmalade
1/2 C orange juice
2 tsp ground ginger
2 tsp soy sauce
1 Tbsp dried garlic granules
1 Tbsp dijon mustard

  • Add all ingredients to slow cooker, stir to coat chicken, cover and cook on low for 4-5 hours.
  • Serve on rice, with mashed or roast potatoes, a salad and or steamed seasonal vegetables for a tasty meal at anytime of the year.
  • Remember this dish next time you have to take a pot luck meal to a friends place or when looking for something different at your next picnic.
