Slow Cooker Chicken Casserole | Chicken Chasseur

Watch your supermarket flyers for frozen chicken pieces on special - this is a great recipe for these cheaper cuts of chicken, but be sure to thaw and remove the skin and fat before you add to the slow cooker.

A robustly, flavoursome slow cooker chicken recipe that needs nothing more than chopped up potatoes, peppers and onion, and combining them with chicken in a white wine–tomato sauce.  Tasty and easy - sure to become a family favourite!

Slow Cooker Chicken Chasseur | Slow Cooker Chicken Casserole

Cook on low for 8 hours
Serves 6

3 large potatoes, peeled and chopped in to bite size pieces
1 medium onion, peeled and diced
6 each chicken drumsticks and thighs skin and fat removed
1 large green pepper, cut in narrow strips
1 Tbsp Gravox or Bisto gravy mix (or flour)
1/3 cup dry white wine
4 cloves of garlic, crushed
1 Tbsp tomato paste
440g can tomato puree
1 bay leaf
salt and fresh ground pepper to taste

  • Place the potato cubes and onion in the slow cooker and pile them up against the sides.
  • Add the chicken to the middle of the base, sprinkle over the green pepper strips.
  • Sprinkle over the gravy mix (replace with flour if preferred) and add other ingredients.
  • Cover and cook on low 8 hours, or until chicken is cooked through and tender and potatoes can be easily pierced. Discard bay leaf before serving.
