Beef & Kumara Curry | Slow Cooker Curry

Regardless of whether you are on a budget or not, it is always wise to buy what's on special, to stretch those dollars further.  This recipe came about one week when the best value for money cut of beef  was beef schnitzel.  You can use any cut of beef, pork or chicken with this recipe - and in fact you could even substitute the meat for cooked or canned chickpeas and make a vegetarian curry.  It will be tasty no matter what you choose.

If you are on a budget, go for the lesser quantity of meat, but if your meat eaters won't eat a dish with not much visible meat, then go for a higher amount.  No hard and fast rules here, just do what you know will get you a stack of cleaned plates, full tummies and smiles at the end of dinner!

Beef and Kumara Curry


serves 4-6
Cook on low for 6 to 8 hours

200g - 600g beef schnitzel, sliced into strips or cubed
500g kumara, peeled and cut to 2cm dice
2 large onions, chopped
2 carrots, peeled, quartered then sliced
the rind of a lemon
1 Tbsp dried garlic granules
1 Tbsp hot curry powder
2 Tbsp brown sugar
1 tsp ground ginger
1 tsp cinnamon
440g can lite coconut milk
440g can crushed tomatoes

½ Cup saltanas (optional)
1 apple, wash and grate, discard core (optional)

Place the beef in the middle of the slow cooker, add the root vegetables to the sides, sprinkle onions over the top.
Wash and dry the lemon, and with a paring knife, cut the rind off in one long strand – include as much white as possible, to make removing it at the end of the cooking time, easier!
Sprinkle the dry spices over evenly.
Pour over the lite coconut milk and tomatoes in juice.
Cover and cook on low for 6 to 8 hours. Stir part way through to combine all ingredients evenly, if possible.

Before serving, remove the lemon rind, and add the optional ingredients if using, stir thoroughly and leave to sit while you organise the rice and plates etc.

To stretch this even further, serve over rice and with a side of steamed seaonal greens and other vegetables. Even though it has kumara in it, we love it served with creamy mashed kumara. Have you noticed we rather like kumara? :) Enjoy!

  1. I would recommend finely sliced o crushed garlic rather than the dried variety.
