Whole Chicken Roast | Slow Cooker Roast Chicken

The ultimate in easy summer recipes is to over night cook a large whole roast chicken in your slow cooker, and in the morning, take it out and pop it in the fridge so when you come home for dinner you have cold cooked chook to make a meal with.

Obvious choices for my family are chopped chicken over lettuce leaves with various other salad extras, such as chopped tomatoes, grated carrot, diced peppers, mushroom slices, a sprinkle of cranberries, pumpkin seeds, fine chopped herbs and swirl of your favourite salad dressing. Add a bowl of rolls and set the table, dinner is served!


LEMON HERB ROASTED CHICKEN
Serves 4-6
2-3kg whole roast chicken
½ teaspoon salt
½ onion, chopped
2 tablespoons fresh parsley
1-2 tablespoons butter
½ teaspoon dried thyme
Juice of one lemon teaspoon
paprika

Place the onion in the cavity of the chicken and rub the skin with butter. Place chicken in the slow cooker.
Squeeze lemon juice over chicken and sprinkle with remaining seasonings.
Cover and cook on low for 8-10 hours or on high for 4 hours.
