When we were working and lived over an hour (in the Friday night rush hour traffic) away from home, we used to go to a local Indian restaurant before we tackled the motorway. More often than not, I would have the Lamb Rogan Josh - here is my easy Lamb Rogan Josh slow cooker version of this Indian delight!

Lamb Rogan Josh – easy!
Serves 6
Cook on low for 8 hours
Cook on low for 8 hours
1.5kgs boned lamb coarsely chopped
2 large onions sliced thinly
5cm ginger grated
3 cloves garlic crushed
½ cup (150g) rogan josh paste
2 Tbsp tomato paste
400g can crushed tomatoes
½ cup beef stock
1 cinnamon stick
4 cardamom pods bruised
2 bay leaves
Combine in slow cooker and cook on low for 8 hours. Remove the last three ingredients, season to taste, serve on rice.
