Slow Cooker Pork Casserole | Pork Goulash

A fragrant combo of pork pieces, chops or whatever you can get at the best price - with tomatoes, onion, and spice is a wonderful dinner to come home to at the end of the day.  Even better that you didn't have to slave over a hot stove to make it.

This is a great week night dinner recipe - to make ahead just assemble all the ingredients in a ziplock bag and pop in the fridge until you are ready to pour the contents into your slow cooker and turn it on.

If you are lucky enough to have left overs, reheat the casserole and serve with a different side dish - see serving suggestions at the end of the recipe.

Pork Goulash | Slow Cooker Pork Casserole

Cook on low for 9-10 hours
Serves 4-5

800g boneless pork pieces
440g can crushed tomatoes in purée
1 medium onion peeled, diced finely
1 Tbsp cornflour
2 Tbsp sweet paprika
2 cloves of garlic, crushed
1 tsp caraway seeds (optional)
3/4 cup reduced-fat sour cream
3 Tbsp snipped fresh dill

  • Mix all but the last two  ingredients in your slow cooker, cover and cook on low for 9-10 hours or until pork is tender. 
  • Stir in sour cream and dill and serve with creamy mash, buttered pasta or roast vegetables and seasonal salad or steamed vege.

    I often find Pork gets really dry in the slow cooker, so keen to find a recipe that doesn't do that.
