Crock Pot Chicken with Sun Dried Tomatoes

There is something special about the way chicken, wine, tomatoes and Italian herbs combine to make irresistible aromas and get those taste buds tingling.  If you happen to have a jar of sun dried tomatoes in the fridge then try this delicious recipe.  This is a recipe that works well with being made the night before (keep in fridge over night) before setting crock pot to cook in the morning.

You may want to thicken the sauce before you serve, so check it 30 minutes before serving time.  To thicken sauce, just add 3 tablespoons of the cooking liquid to a heat proof jug and then add 1 tablespoon of cornflour, mix vigorously and then pour back into crock pot, stir, turn crock pot to high for 20-30 minutes.

Crock Pot Chicken with Sun Dried Tomatoes

Serves 4
Cook on low for 6 to 8 hours

1 onion
2 cloves garlic crushed
1 rib of celery, sliced finely
1 red pepper, diced
1 bay leaf
1 tsp dried oregano, Italian or mixed herbs
4 chicken portions
440g/14oz tinned crushed tomatoes in juice
30g sun dried tomatoes, finely chopped
2 tsp tomato paste
¼ cup red wine
½ cup chicken stock

Add all ingredients to slow cooker, cover and cook on low for 6 to 8 hours or until the chicken and onions are tender.

Taste and adjust seasonings as required before serving over buttered noodles or with creamy mash and a salad or steamed seasonal vege.
