Tip: Are you wondering why I put Worcester sauce in everything? America's Test Kitchen taught me that trick - if you are not browning anything before popping it in the slow cooker, just add a bit of Worcester sauce and it pumps up the flavour.
Spiced Apricot Chicken
Serves 4
Cook on low for 8 hours
2 tsp cornflour
2 tsp ground cumin
1/4 tsp chilli flakes
2 tsp garlic granules
freshly ground salt and pepper to taste
440g can apricot nectar
1 onion quartered and thinly sliced
100g dried apricots (14 as it turns out)
2 tsp Worcester sauce
1kg skinless drumsticks
- In the base of the slow cooker add the list of dry ingredients, stir in about a third of the apricot nectar, stir or whisk to make a smooth sauce. Add the remainder of the nectar, stir/whisk to combine.
- Add in the onions, the dried apricots and Worcester sauce and stir to combine.
- Add the drumsticks, cover and cook on low for 8 hours.

You mentioned Dried apricots in your intro to this recipe was wondering when you add them to the slow cooker?
ReplyDeleteHi "me"! Thanks for letting me know! I'm so glad you pointed my omission out - the dried apricots were amazing!
ReplyDeleteThanks It looks amazing and I really wanted to try it, will let you know how it goes.
DeleteYummy, enjoy your chicken! So much better than with a can of apricots! Next time I make it, I'll cook overnight, refrigerate and enjoy it the next night.
DeleteJust made an amazing lasagna - watch this space! :)
What is corn flour?
ReplyDeleteIt a gluten-free thickening agent. Some countries call it corn starch. If you don't have it, just replace it with regular flour and be sure to blend it into a small quantity of liquid that you have made smooth before adding to the pot!
