Pork Casserole | Slow Cooker Pork

Last Friday my sister-in-law rang me and asked if I could send my Crock Pot Chocolate Self Saucing Pudding to her at work.  Her colleague was entering in a Crock Pot Cook Off and wanted a 'winning recipe'.
On Monday I got another call to say that her colleague had won!  So if you want a simple yet stunning dessert to serve or take out to a pot luck, you'll be pleased to have this 'winning recipe'.


Today's recipe is a wonderful tomato based pork casserole that is wonderful served in individual bowls over a bed of freshly cooked pasta.  This is a great weeknight meal after sports practice or those times when not every one is home for dinner at the same time.  Hopefully this will be a 'winning recipe' with your family.



Slow Cooker Pork Casserole

Serve 6
Cook on low for 8 hours

750g/1-1/2lb diced pork meat
1 large brown onion, peeled and diced
2 carrots, peeled and sliced
400g/14oz can Italian flavour inspired tomatoes or pasta sauce
1/2 cup white wine (or chicken stock)
a generous grind of fresh cracked pepper
3 cups fresh baby spinach leaves
Fresh chopped herbs to garnish
  • Add all the ingredients except spinach and garnish to the slow cooker and stir to combine.
  • Cover and cook on low for 8 hours.
  • Check and adjust seasonings and thicken if you prefer a thicker sauce. (In a small jug add 1 Tbsp cornflour, add 3 Tbsp liquid from the slow cooker stir vigorously to remove lumps, add more liquid, stir again and once smooth, add to slow cooker and stir to combine.)
  • Add the spinach and stir to combine, replace the lid and let cook for a few more minutes until spinach has wilted.
  • Either serve over pasta or stir the cooked pasta through the casserole, serve and then garnish with complementing herbs.
